This oven takes the best of convection oven cooking and steaming and combines them together in one truly remarkable unit. Featuring high quality stainless steel exterior construction on the top, front, sides, and back, and a dual pane fully tempered viewing window with hinged inner glass for easy cleaning, this combi oven is a tremendous technological advancement in the modern kitchen. The door has a mounted condensate trough and easily adjustable hinges to provide a solid fit. The inner body of this oven has a fully welded stainless steel frame and a fully insulated cooking chamber. The chamber has easily removable side rails provided. The oven's operation features the standard controls of steam, combi, hot air, and cool down, as well as a steam on demand feature. The oven will heat to 500 degrees and offers a dual stage door latch to allow stem to fully escape before completely opening the door. Steam release is a push button away, as is immediate steam recovery when switching modes due to the design element of positioning a self-contained, self-flushing steam generator separate from the cooking compartment. This oven has an open vented system that allows condensed steam to drain away the by-products of the cooking process and eliminate flavor transfer. This gas oven is ignited using an electronic spark ignition system.
